Simple Sweet Potatoes with Pistou

Some days I want a sweet potato more than anything, and one day last week was one of those days. We didn’t spend a lot of time cooking that night, but managed to whip up this very tasty, very nutritious meal which had the added benefit of involving the much-craved sweet potatoes.

Our meal was just sweet potatoes, broccoli, and quinoa. The sweet potatoes were first sliced, then softened in a pan with some boiling water, then browned in a little bit of coconut oil. The broccoli was also just very lightly browned in a pan, while the quinoa cooked in a rice cooker with vegetable broth. I served the sweet potatoes with some dollops of pistou (basil, garlic, salt, pepper, and olive oil), and drizzled the broccoli with a mild tahini sauce (tahini, water, a little miso, some nooch, and some dried herbs). Quick, simple, but still tasty.
