Pear, Red Cabbage, and Basil Pizza

Whew, I was worried I wouldn’t get a chance to post today. G and I are in Nancy, where wifi is a rarity. Anyhow, I’m managing to write to you from a cute cafe near the Place Stanislas.

This pizza, which G and I made a few nights ago, was truly spectacular. If you have a nice ripe pear around, this would be one great way to use it.

I’m really loving our little pizza rituals. A little stressed out about that pesky dissertation? Beat up some dough! Cold? Turn up your oven to its highest temperature! Need some variety in your life? Top your pizza with pistou and fruit!

As usual, we used this recipe for the pizza crust, which so far has never failed us.

We prepared the pizza dough, and then topped it with

-2-3 tablespoons of pistou (olive oil, fresh chopped garlic, fresh chopped basil, salt, and pepper)
-shredded Vegusto mozzarella
-pear slices
-a few decorative shavings of red cabbage

We popped it in our little toaster oven at its highest temperature for about 12 minutes, took it out, and then sprinkled some fresh chopped basil on top.

A lovely pizza,

which made for a lovely meal.

Did I mention how awesome this was? The pear just melted right into the the Vegusto, which had been saturated by the pistou. It was all fruity and garlic-y and colorful and… delicious. Of course, the red cabbage bits are totally unnecessary–they just make the whole thing a little prettier, and add a little bit of a crunch.

    Just dropping in to say that I’m so glad I found your blog! I love Paris and dream everyday of going back for good. Might be living there next year, fingers crossed.
    And that pizza is absolutely beautiful!
